Alternative names and variants include eggy bread, Bombay toast, gypsy toast, and poor knights.Today we are going to highlight the recipe of fluffy pancakes as well as some of the tips and tricks of this recipe.

Ingredients

  • 4 slices of bread (preferably stale)
  • 2 large eggs
  • ½ cup milk
  • 1 teaspoon vanilla extract
  • 1 tablespoon granulated sugar
  • ½ teaspoon ground cinnamon
  • Butter or oil for cooking 

Steps to be Followed

Step 01

First, you have to prepare the batter. For that take medium sized bowl and pour it with eggs, milk, vanilla extract, sugar, and cinnamon. Now, whisk them all properly so that all the ingredients mixed well.

Step 02

When the batter is ready, now take a slice of bread and dip it into the mixture. Gently coat the bread with the mixture. Be careful, just don’t break the bread into pieces or breads are over coated.

Step 03

After preparing the coating the bread now it’s time to cook. First place a pan or skillet onto cooker while turn the heat to medium. Now, grease the pan with butter or spray some oil on the pan. Then place the slice of coated bread into the pan. Cook for 23 minutes each side until the sides turn into golden brown.

Now, its time for plating. Serve the warm and soft toast with your favorite toppings which can be maple syrup, powdered sugar or fresh fruit

  • Use thick slices of bread to make the French toast softer.
  • Though white bread absorbs more of the egg mixture but it helps to make the it super softer texture.
  • To get richness of flavor you can sue whole milk or add little cream into the egg mixture.
  • Topping which makes the toast tastier are sliced bananas, berries, or a dollop of whipped cream

Yes, fresh bread makes the bread more softer than the stale bread as it absorbs more batter.



Why my toast became saggy and how to prevent that ?

  • You want thick pieces of brioche bread. If you are unable to prepare your own bread (which is understandable), simple Texas Toast is the next best thing. If you have access to a reputable bakery, they may have brioche loaves that you can purchase and cut yourself, which is a superior alternative.
  • Your egg should be more like a custard, with more cream than egg. This was the French Toast Revolution for me. Also, finishing the pieces in a hot oven on a wire rack helps them cook thoroughly.

Shouldn’t French toast be soaked through with the mixture rather than just dipped to cover the outside?

The type of bread matters too. If it’s an exceptionally soft bread the full soak can make for an unpleasantly soggy interior. If you use something with a little more crust/chew (baguette, ciabatta), you could soak it overnight if you want. For my money, stale baguette cut on the bias makes the best French toast.



The best/most elite French toast recipe or technique you know?

  • Use a great bread like brioche or challah.
  • Soak in a custard base of eggs, cream or milk, pinch of salt and a little sweetener like a pinch of sugar or some honey or maple syrup.
    Add a dash of vanilla too.
  • Then cook in butter.
  • You could encrust with chopped nuts or stuff it if you like.
  • But I’d rather just have it with real maple syrup or dusted with a tiny bit of powdered sugar and served with compote or jam.



When making French toast, is it better to use stale, toasted, or fresh bread?

I like it just before the point you could use the loaf to drive nails. If it cuts cleanly and kind of floats on the custard and you have to force it down and stab it repeatedly with a fork to get it soaked through, that’s perfect IMO.



Why do a lot of French toast recipes call for a combination of whole eggs and egg whites?

I have never seen a recipe that called for extra egg whites. I have on the other hand seen recipes that call for extra yolks because it is supposed to make it richer/creamier without having a strong egg taste. I’m french and french toasts are normally to use the dry leftover bread (we call it ” lost bread”) and whole eggs are just fine. Some people add a bit of heavy cream but whole eggs, milk and sugar is all you really need 🙂
